
Ingredients Needed:
2 cups warm water
1 ½ tbsp olive oil
2 tsp of apple cider vinegar
1 jar of Nordic Cooking Baguette Mix

Step 1
Add Baguette bread mix to a large bowl.
Step 2
Add all wet ingredients and stir well with spatula until combined and lump free. Set aside for 3-4 minutes.
Step 3
Transfer the dough to the countertop.
Step 4
Divide the dough into three equal portions.
Step 5
Flatten each portion into a rough rectangle.
Step 6
Fold and roll each piece into a log shape, sealing the seam by pinching it.
Step 7
If too sticky, sprinkle gf flour on a kitchen towel. Place rolled dough onto 'couche'.
Step 8
Let baguettes rest covered in a couche for 45-60 min or until doubled in size.
Step 9
While baguette is proofing place a baking sheet on the middle rack of your oven and an empty tray or cast iron skillet on the lower rack. Preheat your oven to 485ºF.
Step 10
Remove hot tray carefully from middle rack, arrange a piece of parchment on it. Gently transfer the proofed baguettes onto the parchment lined sheet seam side down.
Step 11
Score the baguettes with slashes for a classic look.
Step 12
Add 5 ice cubes to the hot tray or cast iron on the lower rack to create steam. Note: the more steam the more color the baguettes will get in the end.

Bake at 485ºF for the first 10 minutes.

After 10 minutes open oven briefly to let steam out and reduce the oven temperature to 420ºF.

Continue baking for an additional 20 minutes.

Allow the freshly baked baguettes to cool on a wire rack before slicing.
