2 cups warm water
1 ½ tbsp olive oil
2 tsp apple cider vinegar
1 jar of Nordic Baguette
Bread Mix Kit
Add Baguette mix to a large bowl.
Add all wet ingredients and stir well with a spatula until evenly combined. Set aside for 3-4 minutes.
Transfer the dough to the countertop. Divide the dough into three equal portions. Flatten each portion into a rough rectangle.
Fold and roll each piece into a log shape, sealing the seam by pinching it.
Place rolled dough seam facing up onto 'couche'
Let baguettes rest covered in a couche for 60 min
While baguettes are proofing place a baking sheet on the middle rack in your oven and a sheet on the lower rack.
Preheat your oven to 485ºF.
Remove hot sheet carefully from middle rack, arrange a piece of parchment on it. Gently transfer the proofed baguettes onto the parchment lined sheet seam side down. Score the baguettes.
Add 6 ice cubes to the hot sheet on the lower rack to create steam. Note: Steam is necessary to give baguette crispy texture and color.
Add baguette to oven’s middle rack and back at 485ºF for 10 minutes.
After 10 minutes open oven to let steam out and reduce the oven temperature to 420ºF. Bake for an additional 20 minutes.
Allow the freshly baked baguettes to cool on a wire rack before slicing.
